Plum, raspberry, mocha, and a touch of herbaceous swirl in the glass.
Tasting Notes
The Los Carneros region of Sonoma provides the perfect location for this inaugural vintage of Toro Hills Pinot Noir. Plum red in the glass, this silky Pinot Noir boasts aromas of rich cherries, dried herbs, cola, and savory blackberry. Flavors of plum, raspberry, mocha, and a touch of herbaceous spice round out the wine. A well-balanced mid-palate and soft, plush tannins with vibrant acidity elongate the fruit on finish.
Cooperage: 100% French Oak, 30% new
Alcohol: 15%
The Vineyard
Toro (Spanish for Bull) Hills is part of the historic Donnell Ranch property located in the southwestern corner of Sonoma County’s Carneros AVA. Now managed by the Sangiacomo family, this vineyard is on the farthest westward edge of the Sonoma Carneros appellation on a gentle eastward facing slope. While it shares a climate cooled by fog from the bay, the defining factor that sets this vineyard apart is its extraordinary winds. Because of these winds, temperatures are lowered, extending the growing season, and allowing our grapes to develop sugar and flavor more slowly.
Winemaking
The fruit was fermented in open top oak puncheons to allow more complexity and variety in the phenolic, aromatic and flavor components of the wine, producing a completely unique representation of the Pinot Noir grape. The wine was aged in French oak, a portion of which was the same puncheons the wine was fermented in that very year and rested ‘sur lie’ for the entire aging period.
